Cardamom (scientific name: Elettaria cardamomum ) is a plant of the ginger family native to southwest India, and is now widely cultivated, mainly in Southeast Asia. The plant grows to a height of over 2m, and produces flower stalks 50-120cm long, which produce fruits about 2cm in diameter. The dried fruits are sold as a spice, and contain 15-20 black seeds inside.
The seeds have a sharp, refreshing aroma similar to camphor, and are used to flavor a variety of dishes and beverages, including curry. In Arab countries, they are popular as a "cooling spice," and are characterized by the refreshing sensation you get when chewing them. We also use them as a spice ingredient in beverages.
